This is the cookie you need to make when you're stuck deciding between two classics - chocolate chip and peanut butter cookies. With a delicious peanut butter filling, these peanut butter stuffed chocolate chip cookies are so, so good - and you never have to pick just one type of cookie again! Making a peanut butter filled cookie may seem intimidating at first - but I promise it is easier than it looks! These cookies are both delicious while still warm and the peanut butter is melty, and also later once the peanut butter filling has firmed up!

What are the ingredients in peanut butter stuffed cookies?

The ingredients in these peanut butter filled cookies are just the standard cookie ingredients found in most homeamde cookies:

  • sugars - three types of sugar - powdered, brown, and granulated
  • peanut butter - of course!
  • butter - the base of the chocolate chip cookie part
  • egg - for structure in the cookie
  • vanilla - for flavor
  • flour, salt baking, soda - forms the bulk of the chocolate chip cookie
  • mini chocolate chips - mini chocolate chip cookies are important because if the chips are too large they interfere with trying to form the cookie around the peanut butter filling

How to make peanut butter stuffed cookies?

step one: Prepare you peanut butter filling by mixing the peanut butter with the icing sugar until completely smooth, the consistency should be almost like playdough

step two: Form the peanut butter filling into 24 equal shaped balls and place in freezer to firm up while you prepare the chocolate chip cookie dough - the colder the peanut butter is the easier it is to work with

step three: make the chocolate chip cookie dough by creaming together the butter and sugars until liught and fluffy, about 3-4 mintues

step four: beat in the egg and vanilla, followed by the flour, baking soda, and salt

step five: stir in the chocolate chips, then portion the dough into 24 equal sized balls

step six: press the chilled peanut butter filling into the center of each chocolate chip cookie dough ball, then pinch the edges together to seal and gently roll the dough until it is a sphere

step seven: place cookie dough onto lined baking sheet and bake at 350 F for 10-12 minutes, or until the cookies are just golden

There are a few things that all my cookie recipes have in common that make them that special homemade type of good:

  • not too sweet - I have a sweet tooth, but I like to be able to taste something other than just sugar in my treats

  • soft - this isnt an exact rule, because some cookies are meant to be crunchy (like my shortbread!) but if a cookie is meant to be soft, I want it soft and chewy

  • perfectly baked - just perfectly golden and cooked through, no one wants to eat a burnt (or partially raw!) cookie

  • interesting flavor combinations - I don't mean wild or super crazy flavours that are unheard of, but combining two classic flavors like I have done in this recipe guarantees a crowd-pleasing cookie

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 3/4 cup butter, room temperature
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon vanilla
  • 1 egg, slightly beaten
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips

Directions

Prepare The Oven And Baking Sheet

Preheat oven to 350 F, line a baking sheet with parchent paper and set aside

Make The Peanut Butter Filling

In a small bowl, mix peanut butter and powdered sugar until completely smooth, the texture will be somewhat like playdough

Divide The Peanut Butter Filling

Portion the peanut butter mixture into 24 equal balls, then place into freezer while you prepare the chocolate chip cookie dough

Cream Butter And Sugars

In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy

Add The Eggs And Vanilla

Beat in the vanila and egg until completely mixed through

Add The Dry Ingredients

Add the flour, baking soda, and salt and mix well

Add Chocolate Chips And Form Cookie Dough Balls

Stir in the chocolate chips, then portion the cookie dough into 24 equal cookie dough balls

Stuff The Cookies

Get the frozen peanut butter filling, and push one into the center of each cookie dough ball, bringing the edges of the cookie dough around the peanut butter and pinching to close

Bake The Cookies

Bake in preheated oven 10-12 minutes, or until cookies are lightly golden

Cool The Cookies

Allow to cool about 2-3 minutes on baking sheet, then transfer to a wire rack to cool completely
