Sometimes we need a good, easy, healthy salad to get help us through the week. Lentil Feta Salad checks all those boxes. I first found the idea of a lentil salad in one of my favourite cookbooks, Oh She Glows by Angela Liddon, about 5 years ago. Since then, I have put my own spin on the ingredients and ended up with this recipe.

The salad comes together in less than 15 minutes. It is one of the easiest dishes you will ever make! Lentil Feta Salad is great as a side salad, or even packed as a lunch! You can make this salad in advance and store it in the fridge, in fact I even enjoy it more the second and third days as all the flavors get a chance to mingle together.

One of the best things about this salad is you can play with the ingredients a little bit, and add what you have. I don't always make it the exact same way, though this is definitely my favorite way! I've also used tomatoes, sunflower seeds, shredded carrots, slivered almonds, and even chopped spinach, depending on what I have in my fridge when I want to make it. Ingredients

  • 1 can of lentils, rinsed and drained
  • 1/2 bell pepper, chopped
  • 1/4 English cucumber, chopped
  • 1 stalk celery, chopped
  • 1/4 cup craisins
  • 1/4 cup pepitas (pumpkin seeds)
  • 1/2 cup feta cheese
  • 3 tablespoons balsamic glaze
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine lentils, bell pepper, cucumber, celery, craisins, pepitas, and feta
  2. Drizzle balsamic glaze and olive oil over salad, stir until salad is thoroughly coated
  3. Add salt and pepper to taste, serve and enjoy
