Sometimes we need a good, easy, healthy salad to get help us through the week. Lentil Feta Salad checks all those boxes. I first found the idea of a lentil salad in an old vegetarian cookbook about 5 years ago. Since then, I have put my own spin on it and ended up with this. Sometimes I even change it up a bit to add some different veggies, depending on what I have in my fridge!

What are the ingredients in lentil feta salad?

The most important ingredient is of course lentils, after that it is up to you what veggies to add. Here is my favorite way to make and serve this salad:

  • lentils - the base of the salad
  • chopped veggies - i like to use cucumber, tomato, and bell pepper
  • sunflower seeds - add a nice crunch and a subtle nutty flavor
  • cranberries - a sweet, delicious addition to the salad
  • feta cheese - omit to make vegan; its a lovely, tangy addition to the salad
  • balsamic glaze - a sweet, thick version of balsamic vinegar
  • olive oil - just a little; use your favorite salad dressing oil instead if you prefer

How to make lentil feta salad?

It really couldn't be easier to make this salad:

step one: put all salad ingredients in bowl and mix

step two: drizzle balsamic glaze and oil over top and toss to coat

Storage tips for this salad:

This salad stays good in the fridge in an airtight container for 3-4 days. I like to make it at the beginning of the week and then serve with lunches/dinners throughout the week for an easy, healthy, filing side. This salad doesn't freeze well.

What other veggies go well in this salad?

I like to use lots of different things in this salad, other than my usual pepper, cucumber, tomato mix including:

  • carrot - shred it for best incorporation
  • celery - chopped small to add a bit of crunch
  • broccoli - small florets work best
  • spinach - chop into ribbons so it mixes in well

Ingredients

  • 1 can of lentils, rinsed and drained
  • 1 bell pepper, chopped (1 cup)
  • 1/2 English cucumber, chopped (1 cup)
  • 1 medium tomato, chopped (1 cup)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sunflower seeds
  • 1/4 cup craisins (dried cranberry)
  • 3 tablespoons balsamic glaze
  • 1 tablespoon olive oil

Directions

1. Mix the salad

In a large bowl, combine lentils, bell pepper, cucumber, tomato, feta, craisins, and sunflower seeds

2. Add the dressing

Drizzle balsamic glaze and olive oil over salad, stir until salad is thoroughly coated
