Many delicious recipes use meatballs as the star and while sometimes you just have to use a box of frozen meatballs, this recipe is for when you have an extra 20 minutes to make your own. It is so easy and so much tastier than anything you can buy in a box! They freeze perfectly and they can be used in a variety of dishes; like this meatball soup.

What is in these homemade meatballs?

these meatballs are simple to make and require just a handful of ingredients:

  • ground beef - the base of many meatballs
  • italian sausage - many meatball recipes call for pork, but i like the falvor and seasonings in sausage to make my meatballs
  • breadcrumbs - help give the meatballs some structure
  • milk - used in place of an egg to help give moisture
  • parmesan cheese - for flavor and salt (feel free to omit and add extra salt)
  • seasonings - italian, garlic, parsley, salt, and pepper for a delicous flavor profile

How to make Italian meaballs?

If you have never meade your own meatballs I am going to let you in on a secret: making meatballs is so easy!

step one: mix the milk and breadcrumbs together in a small bowl until the breadcrumbs have completely absorbed the milk (about 2-3 minutes; the consistency will be pasty)

step two: mix all meatball ingredients in a large bowl

stwp three: portion 48 meatballs onto a foil or parchment lined baking sheet and bake until cooked through

Tips and trick for the best Italian style meatballs:

  • use a good quality sausage - the sausage lends a ton of flavor to the meatballs and you want to make sure this a flavor that you enjoy!
  • if you are going to eat the meatballs with pasta, try cooking them in the pasta sauce instead of in the oven - this helps flavor your sauce and also keeps the meatballs very juicy
  • cook until 165 F then remove from oven - no one likes a dry meatball!
  • make sure the meat mixture is well mixed, but don't over-mix
  • you can keep your hands clean by using a stand mixer to mix the meatball mixture
  • don't skimp on the seasoning - trust me you want a flavorful meatball!
  • make them bite sized - I used to constantly make my meatballs way too large and they didnt work well in certain recipes and would have to be cut up; golf ball sized is perfect!

storage and freezing instructions:

These meatballs are just as good reheated in the microwave as they are fresh out of the oven (seriously!). They can be stored in an airtight container in the fridge for 3-4 days. They also are perfect to freeze for another meal; they last for up to 3 months in a freezer safe container or freezer ziplock in the freezer. To reheat, I usually simple microwave in a covered microwave safe container with a lid until warmed through or use them in a recipe as directed.

Ingredients

  • 1/2 cup italian seasoned breadcrumbs
  • ½ cup milk
  • 1 pound mild italian sausage (or try hot if you like it spicy!)
  • 1 pound lean ground beef
  • ½ cup grated parmesan cheese
  • 2 teaspoons italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Directions

Prepare The Oven

Preheat oven to 400 F, line a baking sheet with foil or parchment paper and set aside

Hydrate The Breadcrumbs

In a large bowl, stir together the bread crumbs and milk and allow the milk to absorb for 2-3 minutes

Make The Meatball Mixture

Add the sausage, ground beef, parmesan cheese, italian seasoning, garlic powder and dried parsley to the bowl with the breadcrumbs and stir to combine

Portion The Meatballs

Roll meat mixture into golf ball sized meatballs and place onto prepared baking sheet

Bake The Meatballs

Bake in preheated oven 12-15 minutes, or until browned and the internal temperature is at least 165 F
